The frosting and filling can be made up to 3 days. The cake I wouldn’t make more than a day ahead. It does keep well after frosting and serving for a couple of days in fridge but I would always make as fresh as possible as long as its completely cold when assembling.
It would be great if people who have successfully tried a no-egg version could share their plant-based alternatives. Love the frosting.

Always tricky with gluten free but yes I’d try flax. Definitely increase baking powder. Do let us know!
